Tonight I made scones for our supper. Perfect, wonderful, Irish scones just like Regina taught me. The best I’ve made yet (which isn’t saying much since I’ve only made a handful in my lifetime). We even had the real whipped cream beaten up into soft peaks to top them the way they’re supposed to be eaten.
The only problem was that it wasn’t entirely perfect.
I couldn’t see the ocean. I could kind of deal with that.
We had coffee instead of tea. A little tougher but I still didn’t need therapy or anything.
The biggest problem was our lack of strawberry jam.
My mom makes the greatest jams to sell and so I never make any. But there is no strawberry jam like freezer strawberry jam (as opposed to canned strawberry jam). And since I can get all the jam I like at her house, we live in the luxury of black or red raspberry among other varieties. And we are all live very happy jam lives even without strawberry jam.
Until tonight.
Scones need strawberry jam. So here’s the deal. If you bring me some strawberry jam, I’ll share my scones with you. Oh, but give me fair warning so I can go to the grocery store first. We ate all the cream tonight.

Yum! I have strawberry jam in my freezer, lots of it. I’ll be right over. i wish.
I’ll come and bring you strawberry jam — even some to put in your freezer since I have lots.
You’ve been to Ireland? Dunmore East perhaps? There is something enchanting about Ireland that gets in your blood and doesn’t seem to leave. Not that you would ever want it too! =)
Yum! I love scones…not that I’ve had them very often, and mine weren’t the Irish kind. I’d bring you some jam if I could, I’ve got lots of it in my freezer right now…

YUM! I have strawberry jam in my freezer but the boys won’t eat it because they don’t like the “nuts” in it! grrrrr!!!
Excuse me – i think they’re English scones. Lol. Ahh… haven’t had good scones with jam & clotted cream for a long, LONG time!! May I come round? Well, my “plan” to come to the States this winter isn’t going to work out, and i don’t see it for next winter, so am stuffed…

Lots of s-berry jam in my freezer, and if I’d be living about 11 hours closer, I’d take you up on the offer! Next spring, make up a batch of freezer jam, it’s really quick and easy!

@the_schlabachs – I’ll try. The recipe came in lbs and oz so I converted it the best I could. Keep in mind my translation was imperfect (which is prob why they never turn out the same)
2 1/2 c. flour, fat 1/3 c sugar, 1 T baking powder, pinch of salt, 2/3 stick margarine. Sift like pie crust.
Add: 2 oz raisens (I just throw in a handful)
Add: 1 egg, 250 ml milk (most pyrex measuring containers have the ml’s marked). Stir til just barely mixed. Turn out on floured surface. Knead like biscuits til smooth. (I kept my surface generously floured and worked some of it into the dough. Sorry, I know that’s really not specific. You don’t want it as sticky as cinnamon rolls but not totally dry either).
Pat down to 1/2″ thick. Cut out w/ a glass or whatever you have to make circles. Brush w/ small amount of milk. Sprinkle w/ coarse sugar
Bake in a hot oven. It’s 190-200C for 13 min and I can’t find my conversion cheat sheet so I did mine at 425 for more like 15 – 17 min and they were perfect. I think I used to do 450 and it was a little too hot.

@lislovesben – you guessed it right! I was there to visit once and then our family was there for almost two months in 05 as fill in’s while they were b/w staff missionaries. Have you been there?
Yea I was there in ’03 for a mission trip through Hillcrest Home. We were there with the Yoder’s and Roman and Ruth Kauffman (I think) they had a bunch of little girls. I loved the scones, curvey little roads, the sea, cool damp weather, tea served anytime, the accents, tea at that little cafe in Dunmore East, and learning about a different culture. I still sing “The Feilds of Athanry” that Anita taught us. =) I loved the whole thing and look forward to the day I can see it all again, in about 20 years, but hey you can’t ever quite dreaming! =)
