Thumbs up for another recipe success for Liam.  Since we raised our own chickens last year and had lots of whole birds in the freezer I’ve been doing a number of the roast / potatoes / carrots in the crockpot dinners only with a twist.  Instead of roast, I used chicken.


First thing in the morning (well, I mean after the first cup or two of coffee which goes without saying), sprinkle the whole, frozen chicken liberally with garlic salt and Lawrys season salt (didn’t I tell you those two items are staples at our house?).  Sometimes I switch up the seasonings and use Italian seasoning or lots of basil or whatever happens to be the mood of the hour.  Place breast side down in the crockpot and turn on high (you can turn it down at lunchtime if it’s getting done too quickly).  Add water til it’s about half full.  Let it simmer until around 1:30 or two then add potatoes, carrots, and fresh mushrooms if you have them.  I don’t peel the potatoes, but I do quarter them so they get done quickly … and so they fit better into the little crevices. 

What I love, love, love about this meal is that
1. It’s so easy (pretty key point since allergy free cooking is mostly, not quick and easy).
2. We all like (very important since sometimes allergy free cooking is blah) it.
3. The potatoes and carrots are so wonderfully flavored from cooking in the chicken broth that Liam can easily get by without any butter or sour cream.  The rest of us could should, too.
4. But what I like best about this meal is that the last time I made it, I searched around and found this wonderful cornbread recipe.  It was heavy but super-moist and somehow it made me feel as though we were living back in the pioneer days.  You know, like back before there were little boxes of Jiffy corn bread mix.


Liam ate and ate cornbread and kept making little “num num” noises.  Happy child.  Happy Mommy.  Happy all of us.

    I love to do chicken like that— so so easy and everyone here loves it too!! one pot— and wa- la you just have to add a salad & dessert and you are good to go!! I love cornbread too!

    so yummy. maybe I can give that a try tomorrow. preparing food looks like a mountain to me sometimes, and I don’t even have a good reason. cute pictures, wish my boys were interested in eating like then other then when it’s cereal.

    do you know i am constantly confused which is the breast side of a chicken? i just cannot believe that myself, but it is true! that looks so delicious. i feel like a defector since i have been able to eat unrestricted again. i have not forgotten you and elaine and all the other dedicated moms!!

    That soup looks SO good! And I absolutely love cornbread. But my whole family hates it!  There is this one restaurant around here that has the BEST cornbread muffins…I don’t know if I ever go there without getting one of them. I am happy for you that you have another meal to add to your list of easy, allergy friendly, everybody loves meals.  Have a happy day!

    every time I look at your cute family picture up there I stare at your nice long SLENDER arms and say, “How can she be  short and have such nice arms?”

    And yay for Liam! It’s good my kids didn’t show up for supper because they are cornbread fanatics and he would have been fighting for the last piece!!

    Oh, you are going to be my best friend forever. I don’t think slender arms when I see myself in the mirror … more like long, gangly, disproportionate. Believe me, it’s hard to find sweaters in size small with sleeves that are long enough. grr

    I love crockpots, first of all! And secondly I love allergy free recipes as well. Emma’s only allergic to dairy so I consider myself lucky. I like thinking about all the calories that I skip by not having dairy, it’s great! I think I feel better too. I so want to try the cornbread.
