This is my favorite summer breakfast …. originally posted by Shelly and discovered by Christy. I am in love.
Meet Muesli
1 cup quick oats (no, don’t cook them)
1/4 cup shredded coconut
generous sprinkle of cinnamon
lots of fresh fruit (or in this case frozen blueberries)
drizzles of honey
milk
Stir and enjoy. Some people like to let it sit for a few minutes. I prefer eating mine right away. It is the ultimate quick summer breakfast. Cool. Refreshing. Healthy. Satisfying (seriously, some days I don’t eat lunch after eating this). And best of all, nearly prep-less. Just my kind of kitchen experience.
edited to add: the measurements I gave are one serving for me. I just now saw that Shelly’s amounts are exactly double and it serves THREE of them. And I just told a friend this morning I don’t eat nearly as much since I’ve hit my thirties.

Mmmmmmmmmmmm…. Shelly is the queen of coming up with delicious food! Just recently she’s posted two-week menu plans, and I told her I’m going to use every single one of her ideas. π

Interesting that you just posted this. I just returned from visiting Ireland and they offered us Muesli almost every morning. It was very similar to this–sometimes it had nuts and seeds in it also. Yum!
ooh! yum! maybe this shall be tomorrows plan…today was not nearly so healthy with half a bagel with cream cheese? (gulp)

Yummy:) But excuse my ignorance….Where do you buy it? The M stuff? I just made Granola last night and Hubby was walking around eating it without milk:) Makes me happy when they like stuff that takes me that much time to make!

so yummy and healthy!!!! I had two stink’n cookies for breakfast with three cups of coffee. (not the normal) But it makes me sad, so I am going to go swallow some nutrition pills. π And have a protein shake for snack. haha

Cool, muesli gets more deserved attention. π I was just thinking that I should post another link to last years’ post since old posts sometimes get forgotten. *And* don’t worry about the amount you eat . . . 2 cups doesn’t serve the 3 or 4 of us anymore. I guess the children only ate tiny portions last year, because I do figure about 1 cup for adults and *almost* as much for the kids. They eat it like crazy people. They had cooked oatmeal for breakfast yesterday and huge portions of muesli for supper. It really is “a weight loss program” as my SIL describes it. Fills you up and keeps you there for a while! so i finally got around to making this for breakfast and yeah, it’s good. i can’t believe i’m saying that but there is something very likeable and satisfying about it.
altho, i’m not sure how tiny you could eat a whole serving of this. I halved it and still had more then enough
